 Macadamia nuts1/4 Cup (16 tbs), chopped

Directions

1. Mix sugar, cornstarch and salt in 8-cup measure. Gradually stir in milk. Microwave uncovered on high 6 to 10 minutes, stirring every 2 minutes, until boiling.
2. Gradually stir at least half of the hot mixture into egg yolk; stir into hot mixture in measure. Microwave uncovered on medium (50%) 2 to 3 minutes or until boiling. Stir in margarine and vanilla until margarine is melted. Press plastic wrap onto pudding. Refrigerate at least 2 hours until chilled.
3. Layer pineapple and pudding in each of 4 parfait glasses or dessert dishes, topping with pudding. Sprinkle with nuts.
