Ingredients

 Ripe mangoes- 2 no-€™s, peeled and seed removed
 Sake2 Cup (16 tbs) (For grilled salmon)
 Light soy sauce1 Cup (16 tbs) (For grilled salmon)
 Toasted sesame oil1/4 Cup (16 tbs) (For grilled salmon)
 Honey1/4 Cup (16 tbs) (For grilled salmon)
 Ginger4 Teaspoon, grated (For grilled salmon)
 Garlic4 Clove (5gm) (For grilled salmon)
 Green onions- 4 no-€™s, trimmed and sliced
 Chili oil1 Teaspoon (For grilled salmon)
 Atlantic salmon fillets- 8 no-€™s (6 oz)
 Mangoes-€™- 2 no-€™s, peeled, seed removed and diced
 Peach- 2 no-€™s, peeled, seed removed and diced
 Tomato- 2 no-€™s, diced and drained
 Scallion- 6 no-€™s, finely chopped
 Ginger4 Teaspoon, finely chopped (To be mixed into salsa)
 Fresh coriander- ½ cup, finely chopped
 Red onion- ½ cup, finely chopped
 Jalapeno pepper/ Serrano pepper- 2 no-€™s, seeded and finely chopped
 Balsamic vinegar2 Tablespoon (To be mixed into salsa)

Directions

MAKING
1. In an electric mixer, combine all the ingredients, apart from salmon. Blend well till smooth and remove on to a flat plate.
2. Add fish, coat well with marinade and marinate for minimum 20 minutes. Alternatively, marinate in refrigerator for 1 hour.
3. Heat grill plate and place marinated fish fillets.
4. Grill for 5 minutes on each side and remove on to a presentation platter.

SERVING
5. Serve warm with salsa.
