Tropical Fruit Salad Recipe

Ingredients
2 cups pineapple juice
2 tablespoons firmly packed light brown sugar
1 tablespoon plus 1 teaspoon grenadine or 2 teaspoons each orange juice and cranberry juice
1/4 teaspoon ground ginger
1 large mango (1 3/4 pounds), peeled, pitted, and sliced 1/2 inch thick
1 medium-size pineapple, peeled, quartered, cored, and sliced 3/4 inch thick (3 cups)
4 medium-size bananas, peeled and sliced 3/4 inch thick (1 1/2 cups)
1 pint strawberries, hulled and halved
Fresh mint leaves (optional garnish)
Directions
ln a large bowl, combine the pineapple juice, sugar, grenadine, and ginger.
Add the mango, pineapple, bananas, and strawberries and toss gently to coat.
Cover and refrigerate for at least 2 or up to 24 hours.
If desired, garnish each serving with the mint.
