Tropical Fruit Bran Muffins Recipe
Ingredients
1 egg
2 tbs. butter (or margarine)
3/4 cup crushed fresh papaya or pineapple (or mixture of both)
1 1/4 cups flour
6 tbs. sugar
1 1/2 tbs. baking powder
1/4. tsp. soda
3/4 tsp. salt
1/2 cup bran flakes
Directions
Beat egg, add melted butter and fruit pulp.
Sift together dry ingredients and stir into fruit mixture, then add bran.
Rub muffin pans with additional butter and fill 3/4 full.
Bake 30 mins.at 375° F.
