Ingredients
1 (8 ounce) package fat-free cream cheese, room temperature
1(12 ounce) can country raspberry frozen concentrate juice, softened
10 raspberry flavored fruit fat-free Newton cookies, softened
1 quart fat-free no sugar raspberry ice cream
Directions
Cream cheese until fluffy.
Gradually add juice concentrate and beat until well combined.
Add softened ice cream and beat.
Process cookies until they make a fine crumb.
Place 1/2 of ice cream mixture in bottom of 8x8-inch square pan.
Sprinkle with cookie crumbs (reserving 2 tablespoons for topping).
Place remainder of cream mixture on top of cookie layer.
Sprinkle with cookie crumbs.
Freeze.
