Traditional Coconut Biscuits Recipe
Ingredients
| 225 g -8 oz butter | ||
| 225 g -8 oz sugar | ||
| Eggs | 3 | |
| Few drops vanilla essence | ||
| 450 g - 1 lb plain flour | ||
| Baking powder | 3 Teaspoon | |
| 85 g - 3 oz desiccated coconut | ||
Directions
Cream together the butter and sugar in a mixing bowl.
In a smaller bowl beat together the eggs with the vanilla.
Slowly beat the eggs into the creamed mixture until it has all been used up.
Fold in the sifted flour and baking powder, then finally the coconut.
Mix well together lightly, until it has formed a soft biscuit dough.
Using a biscuit maker, press out into required shapes onto a baking sheet.
Alternatively roll out onto a lightly floured board and cut into attractive shapes.
Decorate with coloured coconut or any other decoration.
Bake for almost 20 minutes or until a light golden shade and cool on a wire tray.
