Traditional Brisket Recipe

Ingredients

 
3 pound brisket of beef
 
1 1/2 tablespoons olive oil pinch of salt
 
Pinch of pepper
 
1 small green pepper, chopped
 
2 large onions, chopped
 
2 celery stalks, chopped
 
6 peppercorns
 
6 mushrooms, sliced thinly
 
3 shallots, chopped
 
1/3 teaspoon tarragon

Directions

1) Heat the oil in a pan. Lightly sprinkle the meat With salt and pepper and place in pan. Brown the meat on all sides and remove from pan.
2) Lightly brown the green pepper, onion, and celery in the oil. Lower flame and return the brisket to the pan. Add the peppercorns and cover, simmering for approximately 2 1/2 to 3 hours.
3) Place cooked meat in a pan, and place pan in a preheated oven at 350 degrees. Remove the fat from the gravy and place in a skillet; pour remaining gravy over meat. Add the mushrooms, shallots, and tarragon to the skillet containing the fat and saute until vegetables begin to soften. Spread them over the meat and cook for 30 minutes.
