Tournedos With Tarragon Recipe

 Tournedos4
 Salt, pepper
 Butter3 Tablespoon
 2 tablespoons madeira or port wine
 Tarragon1/2 Tablespoon, chopped

Directions

Season the tournedos with salt and pepper and brown on both sides in a very hot pan.
Add 2 tablespoons of the butter and cook a further 3 minutes.
Add the Madeira; let it bubble for 1 minute then stir in the tarragon and remaining butter.
