Ingredients

 
4 filets mignons
 
4 strips of bacon or pork fat
 
1 lb (450 g) fresh spinach, stems removed, or frozen spinach, thawed
 
2 tsp (10 ml) olive oil
 
2 tsp (10 ml) peanut oil or sunflower oil
 
Salt and pepper
 
2 tsp (10 ml) onion, chopped
 
1/4 Cup (60 ml) green olives, chopped
 
1/4 Cup (60 ml) white vermouth

Directions

–  Preheat oven to 350 °F (175 °C).
–  Blanch a few spinach leaves in boiling, salted water and let stand to cool, then pat dry.
–  Fold spinach leaves to same width as bacon or pork fat strips.
–  Wrap blanched spinach leaves around filet mignon, wrap bacon strips around spinach leaves, and tie string around bacon strips, making sure spinach is covered.
–  In a skillet, heat oil mixture and sear tournedos
4 minutes each side, then roll each tournedos on its sides to fry bacon evenly.
–  Remove tournedos from skillet and season with salt and pepper. Reduce heat to low.
