Tournedos Rossini Recipe
Ingredients
| Black pepper | 1 Teaspoon | |
| Tournedos | 4 | |
| 8 thin bacon slices | ||
| Oil | 4 Tablespoon | |
| Salt | 1 Teaspoon | |
| Garlic salt | 1/2 Teaspoon | |
| Madeira | 1/2 Cup (16 tbs) | |
| 4 oz liver pate | ||
Directions
Rub the pepper into the steaks.
Put 2 bacon slices around each steak and secure with a skewer.
Heat the oil in a pan and fry the steaks on a medium heat for 3 minutes on each side; take out of the pan and remove the skewer and bacon.
Season the steaks with salt and garlic salt, place on a dish and keep warm.
Pour off any excess oil from the pan and add the Madeira.
Stir well and boil for 30 seconds, then pour over the steaks.
Top the steaks with 1 or 2 slices of pate.
Serve with peas and French fried potatoes.
