Tournedos Recipe

Ingredients

 
Pepper, freshly ground
 
4 (6 oz. each) toumedos
 
6 tablespoons butter
 
2 tablespoons olive oil
 
4 rounds of bread, about 3 inches in diameter

Directions

Sprinkle pepper on beef.
Put 4 tablespoons of butter and olive oil in skillet, and cook tournedos over high heat for about 5 minutes on each side so meat will be brown on outside and rare inside.
Transfer to warm serving dish.
Pour off fat in pan.
Saute bread in remaining butter untill golden, then drain on absorbent paper.
Place a tournedo on a bread round, and spoon a sauce, such as Madeira over.
