 Unflavored gelatin1
 Cold water1/2 Cup (16 tbs)
 2 8-oz. containers Soft Cream Cheese
 Sugar2 Tablespoon
 Apricot1 17 Ounce, chopped
 Almonds2 Tablespoon, chopped
 1/4 teaspoon rum flavoring
 Frozen whipped topping2 Cup (16 tbs), thawed
 2 cups macaroon cookies, crumbled

Directions

Soften gelatin in water; stir over low heat until dissolved.
Cool.
Combine cream cheese and sugar, mixing until well blended.
Gradually add gelatin, mixing until blended.
Stir in apricots, almonds and flavoring.
Fold in whipped topping.
Place macaroons on bottom of 9-inch square baking pan; top with cream cheese mixture.
Chill; cut into squares.
