Tortilla Soup Recipe
Even a bar of chocolate cannot lift my spirits as well as this Tortilla Soup. I prepare this yum Tortilla Soup as an Appetizer every month or even more often. Have faith in me and try this Tortilla Soup.
Ingredients
Vegetable cooking spray
1/2 cup chopped onion
1 (4-ounce) can chopped green chiles, undrained
2 cloves garlic, crushed
3 2/3 cups water
1 1/2 cups tomato juice
1 medium tomato, peeled and chopped
1 teaspoon beef-flavored bouillon granules
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon Worcestershire sauce
1/4 teaspoon pepper
2 to 4 drops hot sauce
3 (6-inch) corn tortillas, cut into 1/2-inch strips
1/2 cup (2 ounces) shredded Monterey Jack cheese
Fresh cilantro sprigs
Directions
Coat a small Dutch oven with cooking spray; place over medium heat until hot.
Add onion, chiles, and garlic, and cook until onion is tender, stirring frequently.
Add water, tomato juice, tomato, bouillon granules, cumin, chili powder, Worcestershire sauce, pepper, and hot sauce; stir well.
Bring to a boil.
Cover, reduce heat, and simmer 1 hour.
Add tortillas; cover and simmer 10 minutes.
Ladle hot soup into serving bowls.
Sprinkte 1 tablespoon cheese over each, and garnish with a cilantro sprig
