Tortilla Espanola Recipe
This Tortilla Espanola recipe is my favorite. My friends really enjoy this Spanish dish whenever I cook it. Whenever there is a gathering of my friends at my home, most of the time they ask me to cook this delicious Spanish dish. You should try this tortilla espanola recipe.

Ingredients
4 tbsp. oil
4 large potatoes
8 eggs
1 med. onion
Salt and pepper to taste
Directions
Step 1-Peel and cube potatoes, chop onion.
Step 2 -Fry both ingredients in a 10 inch non-stick fry pan with oil. Cover and cook on low heat, stirring occasionally until done.
Step3- In a bowl beat eggs. Add cooked ingredients, salt and pepper and mix. Pour egg mixture back into pan.
Step 4-Cook at medium heat until outside edges begin to cook - about 2 minute. With spatula loosen edges.
Step 5-Cover and cook on low heat for 5 minutes.
Step6-Remove cover and place a large plate face down on fry pan.
Step 7- With pot holders turn pan over onto plate, place pan on stove and slide omelette back into pan.
Step 8-Cover and cook an additional 5 minutes. Cut into 4 slices. You may optionally serve with salsa.

i've learned how to cook this from my grandma which she serves during breakfast. i usually spread tomato catsup on this and eaten with freshly cooked rice. did some revisions too by adding in some milk when scrambling the eggs! did taste good too afterwards...
