Tortellini With Coconut Avocado Cream Recipe
This tortellini with coconut avocado cream is a sweet and savory appetizer that can be served before a dinner party. Cooked in the microwave, the tortellini with coconut avocado cream is prepaed with avocados blended with coconut milk, lemon juice and tabasco sauce with tomatoes and cheese. poured over tortellini and further cooked, it is ready to serve. Ingredients
500 g tortellini
1 large ripe avocado
1/4 cup coconut cream
1 tablespoon lemon juice salt and pepper, tabasco sauce to taste
425 g can peeled tomatoes, drained and chopped
1/2 cup grated parmesan cheese
Directions
Place tortellini in a large bowl, cover with hot water.
Cook for 10-12 minutes on HIGH, until tender.
Drain.
Blend avocado, coconut milk, lemon juice, salt and pepper and tabasco sauce until smooth.
Stir in tomatoes and 1/4 cup cheese.
Pour over hot tortellini.
Sprinkle with remaining cheese.
Heat 3-5 minutes on MEDIUM if necessary.
Cook for 10-12 minutes on HIGH, until tender.
