Ingredients

 
15 mL 1 tbsp margarine
 
250 mL 1 cup mushrooms, sliced
 
125 mL 1/2 cup onions, chopped
 
1 clove garlic, chopped
 
250 g 8 1/2 oz spinach
 
250 g 8 1/2 oz light cream cheese
 
1 medium tomato, chopped
 
50 mL 1/4 cup 2% milk
 
50 mL 1/4 cup grated Parmesan cheese
 
2 mL 1/2 tsp dried thyme
 
2 mL 1/2 tsp dried oregano pepper, to taste
 
250 g 8 1/2 oz tortellini, cooked and drained

Directions

Melt the margarine in a saucepan.
Cook the mushrooms, onions and garlic at medium heat.
Add all the other ingredients, except the tortellini, and mix well.
Cook and stir until boiling.
Add the tortellini and simmer for a few minutes, stirring gently.
