Tortellini With Pumpkin Red Pepper Sauce Recipe
Ingredients
| Cooked tortellini package | 2 , refrigerated | |
| Onion | 1 Cup (16 tbs), chopped | |
| Garlic | 2 Clove (5gm), finely chopped | |
| Red bell pepper | 1 1/4 Cup (16 tbs), chopped | |
| 1 tablespoon butter or vegetable oil | ||
| Solid pack pumpkin | 1 3/4 Cup (16 tbs) | |
| Diced tomatoes | 1 3/4 Cup (16 tbs), undrained | |
| Chicken broth | 1 1/4 Cup (16 tbs) | |
| Dried basil leaves | 1 Teaspoon, crushed | |
| Salt | 1 Teaspoon | |
| Ground black pepper | 1/2 Teaspoon | |
Directions
MAKING
1) Use a medium saucepan, to cook onion, garlic and bell pepper in butter over medium-high heat 3 to 5 minutes or until soft.
2) Fold in pumpkin, tomatoes, chicken broth, basil, salt and black pepper and stir properly.
3) Bring the mixture to a boil.
4) Reduce heat to low and cook gently over medium heat for 5 minutes.
SERVING
5) In a bowl, place the pasta and top with the sauce before serving.
