Tortellini Boscaiola Recipe
Ingredients
750g tortellini
Grated cheese
CREAMY MUSHROOM SAUCE
15g butter
4 spring onions, chopped
250g ham, thinly sliced
250g mushrooms, sliced
1 cup chicken stock
2 cups cream
Freshly ground black pepper
Directions
Cook pasta in boiling water in a large saucepan.
Drain, set aside and keep warm.
To make sauce, melt butter in a frying pan over a medium heat.
Add spring onions, ham and mushrooms and cook, stirring, for 4 minutes or until mushrooms are soft.
Stir in stock, cream and black pepper to taste, bring to simmering and simmer for 6-8 minutes or until sauce reduces and thickens slightly.
