Tortellini And Green Pea Salad Recipe
Ingredients
| Red wine vinegar | 4 Teaspoon (Vinaigrette dressing:) | |
| Lemon juice | 1 (Vinaigrette dressing:) | |
| Dijon Mustard | 1 1/2 Teaspoon (Vinaigrette dressing:) | |
| Salt | 1/2 Teaspoon (Vinaigrette dressing:) | |
| Garlic | 3 Clove (5gm), crushed (Vinaigrette dressing:) | |
| Olive oil | 1/2 Cup (16 tbs) (Vinaigrette dressing:) | |
| Tortellini | ||
| Frozen green peas | ||
| Parsley, chopped | ||
| Grated cheese (Romano or Parmesan) | ||
Directions
Boil either fresh or dried tortellini until barely tender.
Strain from the water and throw into the kettle a package or two of frozen peas.
Cook for only a minute and drain.
Mix with the pasta and the dressing.
Add parsley and cheese.
Chill well before serving.
You may wish more salt and black pepper.
