Ingredients

 Red wine vinegar4 Teaspoon (Vinaigrette dressing:)
 Lemon juice1 (Vinaigrette dressing:)
 Dijon Mustard1 1/2 Teaspoon (Vinaigrette dressing:)
 Salt1/2 Teaspoon (Vinaigrette dressing:)
 Garlic3 Clove (5gm), crushed (Vinaigrette dressing:)
 Olive oil1/2 Cup (16 tbs) (Vinaigrette dressing:)
 Tortellini
 Frozen green peas
 Parsley, chopped
 Grated cheese (Romano or Parmesan)

Directions

Boil either fresh or dried tortellini until barely tender.
Strain from the water and throw into the kettle a package or two of frozen peas.
Cook for only a minute and drain.
Mix with the pasta and the dressing.
Add parsley and cheese.
Chill well before serving.
You may wish more salt and black pepper.
