Eggplant and Pork Omelette Recipe Video

Tortang Talong is actually one of my favorite Pinoy recipe when I was still in the Philippines. Well, it has become my favorite food because it’s cheap and my budget was quite limited.

Ingredients

 
Eggplant,3 beaten eggs,2 tbsp chopped onion,2 tsp minced garlic,Ground black pepper to taste,Fish sauce to taste,1/2 lbs ground pork,1 tbsp butter,2 tbsp cooking oil,

Directions

Boil the eggplant until its soft but not overcooked.
While boiling the eggplant, melt the butter and saute the garlic and onion.
Mix in the ground pork and let it cook.
Put some fish sauce and ground black pepper.
Simmer for about 15 minutes on very low heat.
Strain the juices out of the ground pork.
Peel the eggplant.
Mash the eggplant with a fork, and chop it using a knife if needed.
Mix the eggplant, beaten eggs, and the ground pork.
Heat some cooking oil on a skillet.
Put some of the mixture on the skillet and let it brown. Do the same on the other side.
Serve it with rice and ketchup.
