Tomatoes Stuffed With Guacamole Recipe
Ingredients
| 3 Ige. ripe avocados | ||
| Lemon juice | 2 Teaspoon | |
| Cottage cheese | 1 Pint | |
| Green onion | 1 , chopped | |
| Chili Sauce | 1 1/2 Tablespoon | |
| 6 Ige. tomatoes | ||
| Lettuce leaves | ||
| Paprika | ||
| Ripe olives | 6 , pitted | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Peel and seed avocados; mash until creamy.
Add lemon juice, salt, pepper, cottage cheese, green onion and chili sauce; blend well.
Blanch tomatoes; remove skins.
Place tomatoes on end; cut into eighths, slicing almost to bottom.
Spread petals gently; arrange tomatoes on lettuce leaves.
Fill each with guacamole; sprinkle paprika on top.
Garnish with pitted ripe olives.
