Tomatoes Stuffed With Crab Meat Recipe

Ingredients

 
6 medium firm tomatoes
 
1 can (8 ounces) crab meat
 
2 hard-cooked eggs, chopped
 
1/4 cup chopped celery
 
1/4 cup peeled and chopped cucumber
 
Dressing:
 
1/2 cup mayonnaise
 
2 teaspoons mustard
 
Salt and pepper to taste

Directions

Cut off the stem ends of the tomatoes.
Scoop out the insides and reserve for another use.
Lightly salt the insides and invert onto paper toweling.
Set aside to drain.
In a mixing bowl combine the salad ingredients, except for the tomatoes.
In a separate bowl, combine the dressing ingredients, blending well.
Stir in the salad ingredients, mixing gently but thoroughly.
Fill the tomatoes with the mixture.
Chill.
Serve cold.
