Tomatoes And Onions Vinaigrette Recipe
Ingredients
1 large green pepper
4 large tomatoes
1 1/2 cups finely chopped Spanish onion
1 cup chopped parsley
1 cup olive oil
1/3 cup wine vinegar
1/2 tsp. dried tarragon
1/2 tsp. salt
1/2 clove garlic, crushed
1/2 tsp. pepper
1/2 tsp. dry mustard
Lettuce
Directions
Cut pepper into long strips, drop into boiling water and simmer, uncovered, 10 minutes.
Drain and chill.
Peel and slice tomatoes 1 inch thick.
Put in a single layer in a large dish.
Top with green pepper, onion and parsley, spreading evenly.
Combine remaining ingredients except lettuce in a small jar with a tight lid and shake to blend well.
Pour over vegetables.
Cover and chill.
Serve vegetables on lettuce.
Spoon dressing over.
