Ingredients
6 firm tomatoes
3 tablespoons butter
2 tablespoons finely chopped onion
1 cup fresh bread crumbs
1 cup ground Brazil nuts
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 tablespoon lemon juice
Directions
1. Preheat oven to moderate (350° F.).
2. Remove the upper third of the tomatoes and reserve for another use. Press out the juice and seeds from the tomatoes, leaving the shells intact.
3. In a skillet heat the butter, add the onion and cook over low heat five minutes. Add the remaining ingredients and mix well. Stuff the tomatoes with the mixture.
4. Dot with additional butter and bake until browned, ten to fifteen minutes.
