Ingredients

 
Parsley - 2 tbsp, chopped
 
Garlic - 1 small clove, peeled
 
capers - 1 1/2 tbsp
 
Fine breadcrumbs - 1/2 cup
 
Oregano
 
Beefsteak tomatoes - 4
 
Extra virgin olive oil
 
Salt
 
Pepper

Directions

GETTING READY
1 Preheat the oven to 320°F.
2 Grease a cookie sheet with oil.
3 Chop the parsley very finely along with the garlic and transfer to a bowl.
4 Chop the capers coarsely and place in the bowl.
5 Add 1/4 cup of the breadcrumbs and mix well.
6 Stir in 1 1/2 tbsp oil and a generous pinch each of oregano and freshly ground black pepper.
7 Rinse the tomatoes and cut horizontally in half.

MAKING
8 On the prepared cookie sheet, place the tomatoes, cut side up.
9 Sprinkle with a little salt.
10 Cover each cut surface with some of the prepared mixture.
11 Sprinkle the top of each tomato with a little oil and cover with a layer of plain breadcrumbs.
12 Bake in the oven for 25-30 minutes.
13 Place the tomatoes under a very hot broiler for the last 3 minutes to brown the topping.

SERVING
14 Serve at once.
