Tomatoes And Beans Au Gratin Recipe
Ingredients
2 slices bacon, chopped
1 1/2 cup onion, chopped
3 medium tomatoes, peeled and chopped
Salt to taste
Freshly-ground pepper
2 cups soy bean sprouts, steamed for 15 minutes
1/2 cup heavy cream
1 cup grated Parmesan cheese
Directions
Preheat oven to 375°.
In large skillet, fry bacon until just crisp.
Add onion and cook until wilted over medium heat.
Stir in tomatoes and bring to a boil.
Reduce heat and simmer for 15 minutes, uncovered.
Season.
Place steamed soy sprouts in flat baking dish.
Bring cream to a boil and add to tomato sauce.
Pour sauce over bean sprouts.
Sprinkle with cheese.
Bake until heated through and top is lightly browned.
