Tomato-Zucchini Surprise Recipe

| Zucchini - 4 medium, washed and cut into slices | ||
| Garlic | 1 Clove (5gm) (Salad oil - 1/4 cup) | |
| Firm tomatoes - 4 large, peeled and sliced | ||
| Oregano | 1/4 Teaspoon (Salad oil - 1/4 cup) | |
| Salt | To Taste (Salad oil - 1/4 cup) | |
| Pepper | 1 To taste (Salad oil - 1/4 cup) | |
| Parmesan cheese | 4 Tablespoon, grated (Salad oil - 1/4 cup) | |
| Processed Swiss cheese slices - 1/4 pound, cut in strips | ||
Directions
GETTING READY
1) Preheat oven to 375° F (moderate).
MAKING
2) Take a pan and heat oil in it.
3) Add garlic and zucchini. Sauté until light brown in color.
4) Discard the garlic.
5) Take a greased 2 quart casserole and arrange alternate layers of zucchini and tomatoes in it.
6) Sprinkle each layer with pepper, salt, oregano and grated cheese.
7) Cover the top with cheese strips.
8) Bake, uncovered, in the oven for about 30 minutes or until cheese is melted and light brown in color.
SERVING
9) Serve Tomato-Zucchini Surprise hot.
