Ingredients

 
2 cups tomato juice
 
2 sprigs fresh parsley
 
1 bay leaf
 
1/4 teaspoon dried whole basil
 
1 envelope unflavored gelatin
 
1/4 cup cold water
 
1 tablespoon lemon juice
 
2 to 3 drops of hot sauce
 
1/4 cup finely chopped cucumber
 
1/4 cup finely chopped celery
 
1/4. cup finely chopped sweet red pepper
 
1 tablespoon minced onion
 
Vegetable cooking spray
 
24 very thin slices cucumber

Directions

Combine first 4 ingredients in a 2-quart mixing bowl.
Cover with heavy-duty plastic wrap and microwave at HIGH for 5 to 6 minutes or until boiling; stir well.
Cover and microwave at HIGH an additional 2 minutes.
Strain, discarding herbs.
Soften gelatin in cold water 1 minute; add to hot tomato juice mixture, stirring until gelatin dissolves.
Stir in lemon juice and hot sauce.
Chill until the consistency of unbeaten egg white.
Stir in chopped cucumber, celery, sweet red pepper, and onion.
Pour into 4 (6-ounce) molds coated with cooking spray.
Chill overnight.
Arrange cucumber slices on individual plates.
Unmold chilled aspic onto cucumber slices.
