Ingredients

 
1. Ripe Tomatoes - 4,
 
2. Garlic - 5-8,
 
3. Ginger - 1inch,
 
4. Onion - 3,
 
5. Green chilly - 3 (Slit lengthwise),
 
6. Coconut paste - 3 tsp,
 
7. Turmeric powder - 1 tsp,
 
8. Red chilly powder - 5 tsp,
 
9. Coriander powder - 4 tsp,
 
10. Garam masala powder - 2 tsp,
 
11. Tamarind paste - 2 tsp,
 
12. Mustard seeds - 1 tsp,
 
13. Methi/Fenugreek seeds - 1tsp,
 
14. Cumin seeds - 1tsp,
 
15. Fennel seeds - 1/2 tsp,
 
16. Salt - as per taste,
 
17. Gingerly oil - 5 tsp,
 
18. Curry leaves & cilantro for garnish.

Directions

1. Heat oil in kadai, add methi, fennel seeds, cumin, mustard seeds and saute till they splatter.
2. Add the Onion, green chilly, curry leaves, ginger, garlic and saute for 2mins.
3. Add the tomatoes and saute till they are well cooked to mash.
4. Now add the turmeric, red chilly powder, coriander, garam masala powder, salt and saute for 3mins till all the masalas are well cooked and releases oil in the sides.
5. Add water as needed, adjust the salt and boil for 10 mins till the required curry consistency.
6. Garnish with cilantro and serve with hot rice.
