Tomato Soup French Style Recipe
The tomato soup french style is a flavorful soup made with a lot of vegetables and the flavor of three mixed herbs. Cooked with added bacon for a meaty taste, the tomato soup french style is best served with garlicky croutons on top. Steaming hot, this soup is sure to bring cheer to any meal.
Ingredients
2 slices bacon, chopped
1 tablespoon butter
2 large onions, finely sliced
4 to 6 ripe tomatoes (or 1 cup canned tomatoes), chopped
1 tablespoon tomato puree
2 or 3 strips lemon rind
4 cups Basic Chicken Stock
Salt and pepper
1 teaspoon sugar
1 tablespoon parsley
1/4 teaspoon thyme
1 teaspoon basil
1 tablespoon chopped mixed parsley and basil
Fried garlic croutons (optional)
Directions
Heat bacon in pan.
When fat has run, add butter; melt.
Add onions; cook gently 5 to 6 minutes, until tender and golden brown: Add tomatoes, tomato puree, lemon rind, stock, salt, pepper, sugar, and herbs; bring to boil.
Simmer 20 minutes or until tomatoes are tender.
Put through food mill or blend in electric blender or food processor.
Adjust seasoning.
