Ingredients

 
4 lb (2 kg) ripe tomatoes
 
1/4 cup (62.5 ml) olive oil
 
2 cloves garlic, crushed
 
1 stalk celery, chopped
 
1 carrot, finely chopped
 
1 teaspoon sugar
 
1 tablespoon chopped fresh basil
 
1 tablespoon chopped parsley
 
salt and pepper

Directions

Chop tomatoes and cook in a large saucepan for about ten minutes or until tomatoes are soft.
Cool and sieve or puree in an electric blender.
Saute the garlic in the oil for five minutes.
Add celery, carrot, sugar, basil, parsley and tomato puree.
Season to taste with salt and pepper.
Cook, uncovered, over a low heat for about 1 1/2 hours, stirring occasionally.
