Ingredients

 
1 10 oz (384 g) fresh spinach
 
1/4 cup (60 mL) chives chopped fine or 4 green onions diced
 
1 egg, lightly beaten
 
1/2 cup (125 mL) Cheddar grated
 
4 large tomatoes
 
2 tbsp (30 mL) butter
 
Salt and pepper to taste

Directions

Wash the spinach, place in a microwave-safe bowl, microwave 2 minutes at HIGH.
Pour into a sieve, press with a spoon to remove excess water.
When well drained, chop with two knives.
Salt and pepper to taste.
Add the chives or green onions.
Mix well.
Microwave 2 minutes at MEDIUM.
Beat the egg with the cheese.
Add to the spinach mixture.
Mix thoroughly.
Cut tops off tomatoes, hollow out.
Squeeze each tomato gently to remove some of the seeds.
Sprinkle a little sugar into each tomato shell.
Dice the pulp from inside the tomatoes and add to the spinach mixture.
Fill the hollowed tomatoes with the mixture.
Replace tops removed from the tomatoes.
Preheat the convection part of your microwave oven at 375°F (190°C).
Place tomatoes on a plate, bake 20 to 25 minutes, depending on their size.
Serve with cooked pasta of your choice, micro-waved according to basic instructions in Pasta Cooking Chart, and a bowl of grated cheese.
