Ingredients

 
5 slices diced bacon
 
3/4 c. chopped onion
 
3/4 c. chopped celery
 
3/4 c. finely diced carrot
 
1/2 tsp. sugar
 
8 parsley sprigs
 
2 cloves of garlic, crushed
 
2 28-oz. cans tomatoes
 
2 cans beef broth
 
3/4 tsp. salt
 
1/2 tsp. thyme leaves
 
1 bay leaf

Directions

Cook bacon in large saucepan for about 2 minutes.
Add onion, celery, and carrot.
Cook until vegetables are tender.
Stir in tomatoes, beef broth, seasonings and 2 cups water.
Simmer for 2 hours, stirring occa- sionally.
May add small amount of water if sauce becomes too thick.
Strain sauce through a sieve; add enough water to make 6 cups sauce.
