South Indian Tomato Rice Recipe

Tomato rice is a flavored rice preparation made with basmati rice. Cooked in the microwave, the basmati rice is flavored with garam masala, tomatoes and cumin and can be served as a light yet flavorful meal with vegetables and popadoms.

Directions

Heat oil in a 2 litre deep dish on 100% power for 1:30 minutes.
Add the cumin seeds and microwave on 100% power for 30 seconds.
Add the sliced onions and microwave on 100% power for 5:00 minutes.
Stir once during cooking.
Add the tomatoes, salt, red chilli powder and garam masala powder.
Mix and micro wave on 100% power for 2:00 minutes.
Finally add the rice and water.
Mix well and cook partially covered (with a cling film lid) on 100% power for 12-14 minutes.
Stir once during cooking.
Mix and allow to stand, covered with a foil for 10 minutes before serving.
Garnish with currants or raisins, if desired.
Serve with "Raita" & Papadam.
