Tomato Red Skins Recipe
Ingredients
1 pound red-skinned potatoes, chopped into 1-inch chunks
1 clove garlic, minced
1 cup chopped tomatoes
1/4 cup water, nonfat chicken broth, or vegetable broth
1/2 teaspoon dried rosemary leaves
Directions
Place potato chunks, water or broth, and garlic in a microwave-safe casserole.
Microwave covered with vented plastic wrap on high for 7 minutes.
Let stand for 4 minutes.
Toss potatoes with tomatoes and rosemary leaves.
