Tomato Petal Salad Recipe

Ingredients
6 med. tomatoes
1 c. frozen or fresh peas, cooked
1 c. frozen or fresh diced carrots, cooked
1 c. diced celery
1 tsp. grated onion
1/4 c. mayonnaise or salad dressing
1 tsp. sugar
1 tsp. lemon juice
Salt and pepper to taste
Lettuce leaves
Directions
Scald and peel tomatoes; remove core.
Cut a slice off the bottom; scoop out seed cavities.
Refrigerate until ready to use.
Combine re maining ingredients except lettuce.
Cut toma toes in sixplacesalmostto the bottom; spread the petals.
Arrange on lettuce leaves; fill centers with pea and carrot mixture.
