Tomato Pesto Recipe
Ingredients
2 medium tomatoes, coarsely chopped
1 medium-size sweet red pepper, seeded and coarsely chopped
2 tablespoons minced fresh parsley
2 cloves garlic
1/4 cup chopped fresh basil leaves
1 tablespoon plus 1 1/2 teaspoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
2 teaspoons grated Parmesan cheese
Directions
Combine first 5 ingredients in container of an electric blender, and process until thoroughly pureed.
Add flour, salt, and pepper; process until combined.
Transfer mixture to a saucepan, and bring to a boil.
Simmer 15 minutes, add Parmesan cheese, stirring well.
Serve over pasta or with steamed vegetables.
