Tomato-Oyster Bites Recipe
Tomato-Oyster Bites exploits the flavor of cherry tomatoes and smoked oysters. Whenever I get my hand on oysters I try these tomato oyster bites - they make the best pick to serve as the first course for dinner.
Ingredients
| 40 Cherry Tomatoes (About 2 Pint Baskets) | ||
| Oysters | 1 Can (10oz), drained | |
| Hot pepper sauce | 1 To taste | |
Directions
Rinse tomatoes, remove stems.
Drain on paper towels.
Slice each tomato vertically to within 1/4-inch of the base.
Spread tomato apart slightly, slip in oyster.
Season each filled tomato with 1 to 2 drops hot pepper sauce.
Refrigerate, covered, until ready to serve.
If desired, garnish each tomato with a parsley sprig before serving.
