Ingredients

 
4 cups tomato juice
 
2 teaspoons salt
 
1/4 teaspoon freshly ground black pepper
 
1/4 teaspoon finely chopped basil
 
1 onion, peeled, finely chopped
 
2 envelopes unflavored gelatin
 
1/4 cup cold water
 
2 teaspoons prepared horseradish
 
2 tablespoons sugar
 
2 tablespoons lemon juice
 
1/4 pound elbow macaroni (or noodles), cooked

Directions

Put tomato juice, seasoning, basil, and onion into skillet; heat to boiling.
Simmer 10 minutes; strain.
Soak gelatin in cold water 5 minutes.
Add to hot tomato juice; stir until dissolved.
Add horse radish, sugar, and lemon juice; adjust seasoning.
Set aside to chill until mixture begins to thicken.
Stir in cooked macaroni.
Pour into lightly oiled 9-inch ring mold; chill until set.
Unmold onto serving platter; garnish with fresh tomato slices and black olives.
Fill center with meat, poultry, or fish mayonnaise.
