Tomato-Fruit Chutney Recipe
Ingredients
| Ripe tomatoes | 3 , diced | |
| 2 jalapeno peppers, seeded and minced | ||
| 2 apples, cored and diced | ||
| Onion | 1/2 , diced | |
| Brown sugar | 1/4 Cup (16 tbs), firmly packed | |
| Red wine vinegar | 1 Cup (16 tbs) | |
| Ground cumin | 1/2 Tablespoon | |
| 1 tablespoon minced fresh ginger root | ||
| Ground black pepper | 1/4 Teaspoon | |
| Garlic | 3 Clove (5gm), minced | |
| Cayenne pepper | 1 Pinch | |
| Raisins | 1/2 Cup (16 tbs) | |
Directions
Combine tomatoes, apples, onion, vinegar, ginger root, garlic, raisins, jalapeno peppers, brown sugar, cumin, black pepper, and cayenne pepper in a heavy saucepan.
Simmer over low heat for 40 minutes.
Cool to room temperature and refrigerate.
