Tomato Coulis Recipe

Ingredients
3 firm, ripe tomatoes, peeled and seeded
1/2 teaspoon salt,or to taste
Freshly ground black pepper to taste
1/2 teaspoon sugar
1 tablespoon freshly chopped mint or basil
Directions
To peel and seed the tomatoes, drop them in a saucepan of boiling water for about 20 to 30 seconds.
Remove with a slotted spoon and use a sharp paring knife to peel away the skin.
Then, cut the peeled tomatos in half horizontally.
Place the rounded side in the palm of your hand and squeeze gently so the seeds fall out.
Process the tomatoes in a processor fitted with a steel chopping blade.
The puree can be very smooth or chunky, depending on the texture you want.
Add the salt, pepper, sugar, and mint or basil and taste to adjust seasonings, if necessary
