6-8 baby roma tomatoes
2 cloves chopped garlic
3 fresh basil leaves, chopped
1 Tbs olive oil
salt
freshly ground black pepper
crostini from 1 baguette

How to make Tomato, basil and garlic topping for crostini

Bring a pot of water to a boil. Cut a small x in the end of the tomatoes (not the stem end) plunge tomatoes into
boiling water for 20 sec. drain and cool briefly. Peel tomatoes, chop finely and discard seeds and peel. Combine
tomatoes, garlic, basil, olive oil and salt and pepper in a small bowl. Top crostini with a tsp or two of mixture and garnish
platter with basil sprigs
