Spicy Tomato Aspic Recipe
Ingredients
| Unflavored gelatin | 1 | |
| Tomato juice | 2 Cup (16 tbs) | |
| Lemon juice | 1/2 Teaspoon | |
| Artificial sweetener to equal 1 teaspoon sugar | ||
| Dash cayenne pepper, red hot sauce, or any desired #2A item | ||
| 1/2-1 cup #3A vegetable, evenly diced or shredded (optional) | ||
Directions
Soften gelatin over 1/4 cup cold tomato juice in small saucepan.
Place over low heat, stirring constantly to dissolve gelatin.
Remove from heat.
Add remaining tomato juice, lemon juice, sweetener and desired seasonings.
Chill until slightly thickened.
Fold in any desired #3A vegetable, pour into individual molds (coffee cups, for example) rinsed in cold water to make unmolding easier, and chill until firm.
