Ingredients

 
Bacon- 2 slices or Ham- small quantity, uncooked
 
Onion- 1 slice
 
Carrot- 6 slices
 
Bay leaf- as required
 
Thyme- 2 sprigs
 
Sprig parsley- as required
 
No. 1 can mushrooms- 1/2
 
Cloves- 2
 
Peppercorns- 1/2 teaspoon
 
Nutmeg- few gratings
 
No. 2 can tomatoes- 1/2
 
Flour- 5 tablespoons
 
Brown stock- 1 1/2 cups
 
Salt and pepper- to taste

Directions

GETTING READY
1.Start by preheating the oven to 300F degrees
2.Also chop the bacon or ham
MAKING
3.In a pot, place the bacon or ham and cook with onion and carrot for 5 minutes
4.Now add bay leaf, thyme, parsley, cloves, peppercorns, nutmeg, and tomatoes, and cook for 5 minutes
5.Mix the flour with five tablespoons of cold water and rub out all the lumps; then add enough water so that the batter can be poured in a thin stream
6.Add to the sauce, make sure to keep stirring constantly
7.As the sauce thickens, dilute it with the stock
8.Cover, set in the oven and cook for one hour
9.Strain, add salt and pepper to taste and the mushrooms, drained and cut in quarters
10.Then cook for 2 minutes over direct heat
SERVING
11.Serve with pasta, steak, or spaghetti
