 Cherry tomatoes24
 Zucchini3/4 Cup (16 tbs), finely chopped
 1/2 cup low-fat cottage cheese
 Snipped chives1 Teaspoon
 Garlic salt1/4 Teaspoon

Directions

Cut small slice off bottoms of cherry tomatoes so they will sit flat.
Cut thin slice from tops of tomatoes.
With small melon bailer or spoon, carefully scoop out centers of tomatoes; discard or save for another use.
Sprinkle insides of tomatoes lightly with salt.
In medium bowl combine zucchini, cottage cheese, chives, and garlic salt.
Fill tomatoes with cottage cheese mixture, using 1 rounded teaspoonful for each.
Garnish each stuffed tomato with additional chives, if desired.
