Tomato Veal Chops Recipe
Ingredients
4 loin veal chops, 3/4 in (2 cm) thick
1 cup (250 ml) tomato juice
2 tbsp (30 ml) corn syrup
2 tbsp (30 ml) vegetable oil
1/2 tsp (2 ml) tarragon
1/2 tsp (2 ml) chervil
1 tbsp (15 ml) green peppercorns, mashed
1 tbsp (15 ml) lime juice
Salt and pepper
Directions
Preheat barbecue at HIGH.
Trim excess fat from chops and place them in deep dish; set aside.
Mix tomato juice, corn syrup and oil together in bowl.
Add seasonings, peppercorns and lime juice; mix well and pour over veal.
Marinate 30 minutes.
Place chops on hot grill.
Partly cover and cook 15 minutes.
Turn 4 times, baste often and season once or twice.
