 Butter1 Tablespoon
 Chopped onion1 Cup (16 tbs)
 Shredded carrot3⁄4 Cup (12 tbs)
 Minced garlic1 Tablespoon
 Minced shallots1 Tablespoon
 Sugar1 Teaspoon
 Fresh ground pepper1⁄4 Teaspoon
 Salt1⁄8 Teaspoon
 Basil leaves10
 Sun dried tomato halves in oil with herbs3 , drained
 Organic diced tomatoes2 Can (20 oz), undrained
 Fat free low sodium beef broth1 Can (10 oz)
 Heavy cream1⁄2 Cup (8 tbs)

Directions

Melt butter and add onion, carrots, garlic, adnd shallots.
Cook until vegetables are tender.
Add sugar, salt, pepper and few basil leaves.
Cook and then add sun dried tomatoes, diced tomatoes and chicken broth.
Bring the mixture to a boil.
Let it simmer for an hour.
Remove it from heat.
Blend the mixture until smooth.
Add heavy cream and garnish with basil leaves.
