Double Tomato Soup Recipe Video

Ingredients
1 tbsp butter
1 c chopped onion
3/4 c shredded carrot
1 tbsp minced garlic
1 tbsp minced shallots
1 tsp sugar
1/4 tsp fresh ground pepper
1/8 tsp salt
10 basil leaves
3 drained sundried tomato halves, packed in oil with herbs
2 cans organic diced tomatoes undrained
1 can fat free, less sodium chicken broth
1/2 c heavy cream
Directions
Melt butter and add onion, carrots, garlic, adnd shallots.
Cook until vegetables are tender.
Add sugar, salt, pepper and few basil leaves.
Cook and then add sun dried tomatoes, diced tomatoes and chicken broth.
Bring the mixture to a boil.
Let it simmer for an hour.
Remove it from heat.
Blend the mixture until smooth.
Add heavy cream and garnish with basil leaves.
