 Onions8 Cup (16 tbs), chopped
 Garlic2 Tablespoon, minced
 Olive oil6 Tablespoon
 9 quarts California tomatoes, peeled, seeded and diced
 Marjoram6 Tablespoon, chopped

Directions

MAKING
1) Use a large skillet, to sauté onions and garlic in oil over medium-high heat until tender.
2) Add remaining ingredients to stir in except cheese.
3) Cook the ingredients over medium-high heat by frequent stirring for 10 to 15 minutes, or until sauce thickens.

SERVING
4) Serve the sauce by topping with 1 tablespoon ricotta cheese.
