| Brown sugar | 1/3 Cup (16 tbs) | |

| Tomato Paste | 2 Tablespoon | |
| Whole black peppercorns | 1/2 Teaspoon | |
| All Spice and Hot Pepper Flakes - a pinch | ||

| Bay leaf | 1 | |
| Cinnamon sticks | 1 | |
Directions
MAKING
1) Into a saucepan, mix together, sugar, vinegar, celery leaves, tomatoes, tomato paste, peppercorns, all spice, hot pepper flakes, cloves, onion, garlic, bay leaf and cinnamon
2) Bring the mixture into a gentle boil
3) Turn down the flame and simmer for 30 minutes till the sauce is thickened
4) Take out the bay leaf and cinnamon
5) Using a sieve, press out the sauce
6) Allow to cool at room temperature before keeping in the refrigerator to chill
SERVING
7) Serve alongside some pies, fried condiments and sandwiches
