Basil Tomato Sauce Recipe

|Onions||2 , chopped|
|Red pepper||1 , cored, seeded and chopped|
|Canned tomatoes/1 1/2 pound fresh tomatoes||2 Pound, skinned, halved and seeded|
|Garlic cloves||1 Large, chopped|
|Fresh basil leaves/1 teaspoon dried basil||1⁄4 Cup (4 tbs) (Small Handful Of)|

Add the celery and red pepper.
Cook for a further 2-3 minutes, then add the tomatoes, sugar, garlic, seasoning and basil, if you are using dried basil.
Let the sauce simmer, uncovered, for 25-30 minutes.
Allow to cool slightly, then pour into a blender or food processor.
Add the fresh basil, if using, and blend until smooth.
This sauce freezes beautifully, and keeps very well in the refrigerator for 2-3 days.
